Sweet Paprika is a finely ground powder from various cultivars of Pimento Chili Peppers. Paprika Chilies are somewhat larger and milder than most chili peppers, and these chilies are picked when they ripen and mature to a dark reddish colour. Once ground, the color may vary from a bright red to rusty brown. Sweet Paprika are relished for their vibrant color and mildly pungent, earthy, peppery/sweet flavour.

Paprika is indigenous to South America, but this originally tropical plant is now harvested in Hungary, Israel, Spain, Turkey, the United States and Yugoslavia.

Paprika is best known as a key ingredient in Hungarian cuisine, especially Goulash and Chicken Paprikash. Paprika is frequently used in spiced sausages, Spanish chorizos. Many Portuguese, Spanish and Turkish recipes use Paprika in casseroles, soups and stews as do many Cajun and Creole recipes. Paprika is often added to flour for dusting chicken and other meats. In India, Paprika may be used in preparing Tandoori Chicken, to provide this dish’s signature red color.

Turmeric Powder, with a bright yellowish orange colour, is prepared from the dried roots of the Curcuma longa, a perennial plant of the ginger family (Zingiberaceae). Turmeric is native to tropical South Asia, and grows wild in the forests of South and Southeast Asia. It has a rich, woody aroma with citrus, floral and gingery/ peppery taste. The flavour is mildly sour and bitter, slightly pungent, warm and musky. It is an essential spice in Indian, Moroccan, and Middle Eastern cuisines. Turmeric has been used in Asia for thousands for years as a spice, dye, food colouring, and in Indian traditional medicine.

Turmeric Powder is used in rice, vegetables, beans, chicken, fish, meat, eggs and soup, added to smoothies or Golden Milk. Many Persian dishes use Turmeric as a starter ingredient, and when combined with dried limes, is used to flavor a Middle Eastern stew of meat, lentils, onions and tomatoes that is served over rice. In India, Asia and South Africa, turmeric is added to boiled white rice for a rich, golden color. Turmeric is mostly used in savory dishes but also in sweet dishes like Lebanese Sfouf cake. It has now become fashionable to commercially use it in a wide range of food products including baked goods, biscuits, canned beverages, cake icings, cereals, dairy products, ice cream, orange juice, sauces, yellow cakes and yogurt.

Turmeric is a central ingredient in many spice blends like Indian curry powder, Moroccan Ras El Hanout and pastes. It is an ingredient in Worcestershire sauce and is often used as the colouring agent in yellow mustard, relishes, and pickles.
