Super Easy! Fired up Butter Glazed Sweet PotatoesPosted by fredclark on September 16th, 2010 Perfect for a Autumn side dish or as a filling for harvest ravioli! Here's what you'll need: 3/4 stick of butter 2 Large peeled and diced Sweet Potatoes 3 Cloves minced garlic 1 chopped large Red onion 1/4 cup of Brown Sugar (less for less sweet) 2 Tablespoon chili powder (More for extra heat) Salt and Pepper Here you go: Melt butter in a large skillet over medium heat. Add Onions and garlic. In a bowl, toss cut sweet potatoes with brown sugar and chili powder. Add to the skillet. Cover. Cook 20 minutes on medium heat stirring gently every 10 minutes. Check to make sure potatoes are tender. Turn heat up to high to crisp and caramelize the sugar stirring frequently for about 5 minutes. Salt and Pepper. That?s it!!! Enjoy!
