Dabeli or ‘doucle roti’ is a popular snack of India. It is also called ‘kutchi dabeli’ after its place of origin which is Kutch region of Western India. It essentially contains boiled potatoes mixed with dabeli masala put inside the burger bun and served with spicy chutney. It usually comes along with pomegranate and roasted peanut garnishing.

So to answer the question of how to make dabeli, it is imperative to know what makes the snack, i.e. the ingredients required for dabeli preparation. These include - pav  or the burger buns, dabeli masala powder, pudina and coriander paste, potatoes (which would be boiled, peeled and mashed), Salt, lemon juice, tamarind chutney, sugar, spiced peanuts, scraped fresh coconut, fresh pomegranate kernels, black grapes, nylon sev, chopped fresh coriander leaves, red chilli-garlic chutney and onions. You can enhance the taste of the dabeli, by adding Pudina and Coriander Nutralite instead of the paste. This will not only improve the flavour but also make the recipe healthy. This is because Nutralite products come with 0% cholesterol, 0 trans fats, 0 carbs. It is rather a healthy package of vitamins like A, D and E, MUFA, PUFA and Omega 3 fatty acids.

The making of dabeli is rather easy. The initial step is to get the dabeli masala recipe right. This is prepared by grinding together red chilli, coriander seeds or powder, cinnamon, cloves and cumin seeds (jeera). This is then heated in a pan first. To it the mashed potato is added. With it a little salt and water are added. With it, Pudina and Coriander Nutralite is added and this is mixed lemon juice, tamarind chutney (any chutney will do, depends on how you like it) and sugar. This is cooked for sometime. After cooking, it is mixed with masala peanuts, grated coconut, pomegranate, black grapes, half the sev and coriander leaves. This whole mix is put inside slit pavs or burger buns and pressed a little, frying lightly on a tawa. The toast is spread with Pudina and Coriander Nutralite on both sides and heated till crisp. This is then served on a plate.
