RECIPE: BBQ SPARE RIBS

INGREDIENTS:

900g pork spare ribs

2 tsp dark soy sauce

3tsp hoi sin sauce (available in Chinese supermarket)

1 tsp rice wine or dry sherry

Pinch of Chinese five spice sauce powder

2 tsp dark brown sugar

? tsp chili sauce

2 garlic cloves

 

DIRECTIONS:

1.     Cut the spare ribs into separate pieces if they are joined together.

2.     Mix the soy sauce, hoi sin, rice wine, five spice powder, brown sugar, chili sauce and garlic together in a large bowl.

3.     Place the ribs in a shallow dish and pour the mixture over them, turning to coat the ribs thoroughly. Cover with cling-film and leave to marinate in the refrigerator, turning the ribs occasionally, for at least one hour.

4.     Preheat the oven to gas mark 4 or 180 degrees/350F. Remove the ribs from the marinade and arrange them in a single layer on a wire rack placed over a roasting tin half-filled with warm water. Using a pastry brush, coat the ribs with the marinade, reserving the remaining marinade.

5.     Cook the ribs in the pre heated oven for 30 minutes. Remove the roasting tin from the oven and turn the ribs over. Brush with the remaining marinade and return to the oven for a further 30 minutes, or cook until through. Add more hot water to the roasting tin during cooking, if required. Do not allow it to dry out because the water steams the ribs and aids in their cooking.

6.     6. Transfer the ribs to a warmed serving dish, and serve immediately with boiled fresh corn, if using or sweet corn salad.
