If you are looking to improve on your cooking skills, a refresher course in the basics can be a great investment of your time. But if you are too busy for that, the following tips can help you get back to some cooking basics that you may have forgotten or overlooked. To prepare for the meal that you are going to cook, make a comprehensive list of everything that you are going to need to cook your meal when you go to the supermarket. This will allow you to stay as organized as possible so there is no part of your meal that you leave out. As you cook your meal during the course of the night, make sure that you taste it at several different points. This will allow you to pinpoint exactly when it is done, so that you do not run the risk of overcooking it. Tasting your food is important to achieve the quality you desire. For pasta that is cooked perfectly all the way through, do not place it the in water until the water is boiling. Pasta cooks from the outside in, so to keep your pasta all one texture you need to cook it at the same consistent temperature from the beginning to the end. If you are planning on buying fish from a supermarket or fish store, make sure that you ask the person behind the counter if you can smell the fish. The fish should be very firm and should not have any pungent odors to them. Otherwise, do not purchase it, as they are probably not fresh. Try to store spices in dark, cool places and do not store them above your stove. Places that are bright, humid and hot, can cause your spices and herbs to lose their flavor. A good place to put them would be inside of a pantry or in your kitchen cabinets. When you make chicken stock, a good piece of advice is to make it in a big quantity. Make enough so that you can freeze it and use it in your recipes. A rich chicken stock makes a savory base for soups, stews and other dishes. Allow the stock to cool, then split it up into heavy duty Ziploc freezer bags. It is possible to cut back on the amount of calories that are in your favorite dessert by simply using applesauce in the recipe. Many recipes call for unhealthy ingredients that add tons of calories to a desert that really are not needed. Applesauce will add sweetness to the dessert with adding tons of calories. Sauteing veggies in a bit of chicken broth is a healthy way you can prepare them. Doing so will add a great deal of flavor to your vegetables, and help them maintain their nutritional content. This method of cooking vegetables will be tasty and rich in nutrients. An easy way to skin nuts. When used in cooking, nuts such as almonds and pistachios need their skins removed. Blanch the nuts by boiling them in a pan of water for one minute. Drain the nuts, and place them on a clean dishtowel. Fold the dish towel over the nuts, and rub vigorously. Mirchi ka vada will rub off onto the towel. Marinate meat in a bag. A lot of recipes call for meat to be marinated in a dish for a few hours, turning occasionally. This can be frustrating, as the meat is never completely coated by the marinade. A better way is to throw the meat and marinade in a ziploc bag, remove as much air as possible, and shake well to coat the meat. Place it in the fridge and simply flip the bag occasionally. Make sure you season your meat and fish evenly. Sprinkle your salt and pepper over the food as though it is snowing. This will make it so you avoid clumping and avoid having parts of the meat without any seasoning. This will make for a tastier meal. Cooking the daily meal can seem like a chore sometimes and throwing ingredients together quickly becomes tiresome. Cooking for pleasure can be relaxing, entertaining, and can be delicious. Remind yourself of some of the basic rules of cooking and make cooking fun again for you and your family.
