Sushi is a popular traditional Japanese food of lightly prepared vinegared sushi rice, sometimes with some additional seasonings, like ginger and various types of seafood, and often accompanied by vegetables and fish. Styles of sushi and the actual presentation range widely, but basically, the main ingredient is "yam," also known as sashimi, or raw fish. In western regions of Japan, sushi is usually served without the garnishing of fish. In Japan itself, there is no exact term for "Sushi," but "Sushi" almost always means raw fish and is generally assumed to be vegan, although sashimi may not be.

Many Japanese refer to sushi as udon, which means thin fish, but in actuality, the dish actually uses several different varieties of white fish. Common ingredients include white tuna, kuro-zasa (escargot in Japanese), and eel. Sometimes, ingredients are added that are flatfish-like such as swordfish. The filling, or inside of the sushi, is typically a combination of rice and nori seaweed that give the fish its distinct slimy texture. Japanese often serve it with ginger, which may be an added health benefit.

While in many ways, the preparation of sushi may seem quite simple, in the beginning it was practiced by nomadic fishermen who could only find fresh fish once a week. Because they lived so far away from civilization, the fishermen developed methods of preserving fish that were only eaten on that very limited amount of occasion. Thus, many components of the original sushi were changed over the centuries to make it more palatable. One such essential ingredient is gari or pickled ginger.

Gari is a type of salty fish that is often mixed with soy sauce, to give a salty taste to the roll. In Japan itself, gari is used as an ingredient in sashimi and rolls. However, today gari is used mainly for sushi, either to top or accompany a traditional white, fish roll. Often, it is served raw along with the rice.

To make the white roll, the short-grained rice is cut into long strips, then the slices are mixed together with onions, a bit of ginger and sesame oil. It is eaten on its own, or served with another type of pickled food, such as an assortment of vegetables, meat and fish. In many cases, it is eaten as an accompaniment to grilled food, although it can also be eaten raw. To make it more delicious, some chefs add sugar or a lot of vinegar to the mix.

Sashimi is fish that is cooked with other ingredients in a slightly raw manner. In Japan itself, it is called "zabuton" (fish sushi). In the north, it is called mochi, while in the south, it is called futomaki. Both words mean small rolls of fish. Sashimi is eaten on its own, or accompanied by another type of food.

California roll is made by cutting up a piece of white fish fillet into strips and wrapping it in now, a seaweed sheet. It is rolled up and sliced into the desired lengths, then served with the sauce of your choice. The basic ingredients include ginger, shoyu, mirin, wasabi and sugar. Although there have been several attempts to copy this recipe, the real California roll has remained the unchallenged king of the roll world.

If you go out to eat, ask for a California roll or a yellowtail. If you have never had either, try them both! You will find that you have been missing out on something really delightful!

In Japanese cooking, the most common ingredients are ginger, wasabi, soy sauce, mirin, nutritional supplements and miso. Gari is the ground up root of a flower commonly found in China. Yellow tail is made from yellowfin tuna. The three are combined and the mixture is cooked over a period of time.

Another very popular food from the Orient is seafood. Seafood dishes are very easy to prepare, and can be combined with numerous types of Asian foods. A typical dish in a Chinese restaurant will have fish, vegetables, onions or seafood and then will have a sauce or dressing. A Japanese restaurant will often serve sushi, which consists of cucumber, pickles, sauces and various kinds of spices. The seaweed, which is sometimes used as a sauce, is derived from the Japanese seaweed available only in certain climates.
