Cinnamon Quills (true verum) also called Ceylon cinnamon sticks come from the inner bark of a tropical tree and have a delicate, sweet, woody, aromatic fragrance. It is commonly used in slow-cooked meals, stews, curries and hot drinks.

Cinnamon is used for cooking, baking and flavouring in most cultures. Cinnamon lover’s buy their cinnamon in the quill form and use a handy spice grater to get the maximum flavour intensity. Cinnamon Quills are a terrific compliment to hot drinks like cider, tea, coffee, hot cocoa and liqueurs.  It can be used in many dessert recipes such as apple pie, doughnuts, cinnamon buns and spicy candies. In South Asia and the Middle East cinnamon is often used in savoury dishes including curries, chicken and lamb. In the United States, cinnamon and sugar are often used to flavour cereals, bread-based dishes, such as toast and fruits, especially apples; a cinnamon-sugar mixture is even sold separately for such purposes. In Turkish cuisine it is used to flavour both sweet and savoury dishes. Cinnamon can also be used in pickling. Cinnamon powder has long been an important spice in enhancing the flavour of Persian cuisine, used in a variety of thick soups, drinks, and sweets.

Cinnamon combines well with other spices such as Allspice, Black Pepper, Cardamom, Clove, Ginger and Nutmeg.
