It kills and reduces the number of bacteria to a point that is deemed safe by the health department. It is important to clean the surface before sanitizing it to ensure its effectiveness.

The surfaces you should clean with a detergent include floors, walls, waste disposal bins, storage shelves, etc. The surfaces you should sanitize include handles, doors, faucets, switches, and equipment that comes in frequent contact with food.
