How to identify imported garlic?

  •          Lack of roots. The FDA requires removing all roots from imported produce to prevent soil-borne pathogens from entering the US. It is not a requirement for US garlic farmers, so they often leave the roots attached. People imported them if the bottom of a China Normal White Garlic has a bare, concave surface where roots would naturally be.
  •          Lack of soil stains. It is entirely natural for garlic to have soil stains. Imported garlic went through heavily bleached to remove soil stains and has a white color.
  •          Sprouting. Garlic bulbs naturally bud and will sometimes grow little green shoots. If shoots are coming from the top of the bulb, you are good to go. Another time, the heavy bleaching of imported garlic would kill the garlic and prevent this from happening.
  •          Weight. Imported garlic comprises more water, making it to US supermarkets. Much of the water has evaporated, making it much lighter and less firm than US white garlic. You must check for weight and density.
  •          Taste. Imported white garlic has a more metallic and bitter taste because of a lower concentration of allicin and a higher concentration of chemicals and heavy metals.
