1: Read the label

The use-by date can be a little deceptive since it is usually 18 months from bottling rather than harvest. Even if it\'s written in Italian, French or Spanish, you can probably figure out enough to recognise harvest and use-by dates. The finest producers always put the harvest date probably on the olive oil.

2: Taste

If you have an opportunity to taste out and olive oil before binding, do it. That\'s what matters because if you buy food and don\'t like the taste, what\'s the point? If it isfresh, it should smell and taste like fresh olives, grassy, green, and some varieties can taste fruity. If your olive oil has any of those characteristics, it has been compromised somehow in its life.

3: Color

It is said that the darker and greener an oil, the higher the quality. That said, you should not even be able to tell the oil color from the bottle. The bottle itself should be opaque, either dark glass or metal. Olive oil goes bad fairly quickly. Exposure to light and heat will make the quality deteriorate even more quickly.

4: Filtered or unfiltered

There is an optional step of filtration during making olive oil, which removes olive particles suspended in the oil. Some producers choose to filter their olive oil, while others don\'t.
