Try this Recipe of Amazing Gujarati Lime Pickle

The Gujarati Lime Pickle increases the nutritional value. You could expect Here is the recipe of my favorite pickle even if it turns darker but which is natural.

Take 1 ½ kg limes, clean them & wipe every limes dry. After wiping them off, allow them to sit in open air on countertop or other possibly driest place, that would make sure that no damp available on limes. Cut every lime in eight wedges, if you are taking tiny lemons like there are in india, cut them in four edges.

Take a big transparent airtight glass jar, which happens to be dry, sufficient to fit in every lime wedges & stack the wedges in it.

Drop ⅓ cup salt & close the jar & shake properly. Put the jar in sun for like twenty to twenty five days, and shake the jar at least twice a day. Post twenty days, see if lime wedges for softness, give pressure using your index finger & thumb & if they give away the ready ones for next step. If the wedges don’t break off then cover the jar & put them in sun for one more week. The baking of wedges depends on the received sunlight & atmospheric conditions.

Then drop three cups white sugar or 750 grams, cover the jar & shake properly. Put it in sun for like six to seven days or until the sugar melted & wedges duly marinated inside. Meantime be sure about the shaking jar twice in a day. Putting in sun at this time supports to slowly cook sugar & provides it the texture & delicious caramelized flavor in lime pickle.

Next, on brink of completion, just drop three tablespoon kashmiri lal mirch/red chilli powder, cover the jar & shake properly.

Now you could enjoy the pickle when you like. What I normally do is that after dropping red chilli powder, I allow the pickle rest for some days in large jar & then put into tiny jars & put them in fridge, this way the pickles would stay fresh & air tight while I use only 1 tiny jar for the regular consumption. So, your lime pickle is ready.
