Dhokla Recipe: Making Soft And Spongy Dhokla In An Instant!

Originating from the state of Gujarat, Dhokla is a favourite among many Gujaratis! This dish is made out of fermented batter that is basically made out of chickpeas and rice. It can be either eaten as an appetizer, main course or even a snack. Being able to master the dhokla isn’t that hard to be honest. There are only a few steps which involve in making the perfect soft and spongy dhokla.

When it comes to khaman dhokla it is not only healthy and nutritious but it is also vegan and gluten free! It is a savoury dish which basically consists of soft steamed cakes that is sweet and tangy with a little kick of spice! One of the main ingredients of dhokla is chickpea flour and the textures of these dhoklas are quite delicate and spongy.

Mastering the dhoklas recipe is not rocket science and since this is a step by step guide you can quite easily make it at the comfort of your home. This recipe is hearty and healthy! It is of course a steamed recipe which makes it all the more less in calories. These warm steamed cakes are the perfect breakfast on cold winter mornings. All you need to accompany this dish would be a hot cup of tea or coffe along with some chutney to complement the dhoklas!

For this recipe you would need: 1 cup of gram flour, 2 tbsps of semolina, salt to taste, 1 tsp of grated ginger, 3 tsp of sugar, ½ tsp of turmeric powder, 1 tsp of lemon juice, 1 tbsp of oil and some water for the batter. For the tadka you would need 2 tbsp of oil, 1 tsp of lemon juice, 1.5 tbsp of sugar, salt to taste, 1 tsp of mustard seeds, 5-6 green chillies and 4-5 curry leaves.

The first step is to sieve the besan and then add 2 tbsp of suji and pass it through the sieve. Add the turmeric powder along with the salt, sugar and lemon juice. Add a cup of warm water and whisk everything together to form a batter. Make sure that there are no lumps.

Add the oil, ginger and mix it all together and set it aside for 10 minutes in order for it to ferment.

Arrange a stand on a steamer or a large pan and add about 1.5 cups of water and cover it and let it boil for about 10 mins.

Brush a heat-safe container or a thali with oil and then pour the batter into it. Place the container in the steamer or the pan and let it cook for 12-15 minutes. Insert a toothpick to check if they are done before you take it out. When it is done flip the dhoklas and cut it into pieces.

For the tadka add the mustard seeds into heated oil and let it crackle, put the other ingredients and lastly put the green chillies. Let it boil and take it off the heat to cool it down.

Serve the dhoklas with the tadka and some green chutney!
