Ingredients for Chicken Malai Kebab:

  • Chicken boneless - 1 kilogram
  • Refined oil - 2 tbsp
  • Chopped coriander leaves - 4 tbsp
  • Butter - 2 tsp
  • Garam masala powder - 2 tsp
  • Green chutney - 2 tbsp

For Marination:

  • Fresh cream - 100 ml
  • Corn flour - 1 tsp
  • Garlic paste - 2 tbsp
  • Coriander powder - 100 gm
  • Egg - 1
  • Chopped green chilli - 4 tsp
  • Ginger paste - 2 tbsp
  • salt as needed
  • Low fat mozzarella cheese - 100 gm
  • Rice vinegar - 50 ml

How to prepare Chicken Malai Kebab:

Step 1) Wash & clean the boneless chicken slices. Pat the pieces dry & prepare the marinade with salt, ginger, garlic paste, and rice vinegar. Stir to combine the marinade & take the chicken slices into a bowl & marinate with the mix whole night in the fridge, probably the previous night you wish to prepare it. Bring out the bowl the next morning & squeeze the chicken slices lightly against palms & keep beside for a while.

Step 2) Then, take a bowl & add grated mozzarella cheese into it, crush the cheese to prepare a paste kind of consistency. Now, crack the egg in the vessel & have fresh cream alongside cornflour into it. Mix finely all the elements.

Step 3) Then, take the marinated chicken slices & mix them in this cream & cheese mix. Add the coriander powder and chopped green chillies into the vessel & stir the bowl constantly. Refrigerate the chicken slices one more time for two to three hours for marination.

Step 4) Finally, take out the marinated chicken slices & place them into a skewer. Place this skewer in a griller or a tandoor, and cook the chicken slices for five mins. Bring out the chicken slices carefully once done, and hang them onto a bar.

Step 5) Brush them by butter & refined oil and place the chicken pieces back into the tandoor & cook until they become light golden in colour.

Step 6) Chicken Malai Kebab is ready, take the pieces out of skewer in one plate, and garnish with butter, lemon juice, coriander or mint chutney, garam masala powder, if you like. Toss well the chicken pieces and enjoy it hot.
