Ingredients for Kathi Kebab Roll:

Mutton - 300 gm

Butter - 4 tsp

Lemon juice - 2 tbsp

Handful sliced coriander leaves - One

Chaat masala powder - 1/4 tsp

Parathas - Two

Salt as needed

Sliced onion - One

Chopped green chilli - One

Green papaya - 1 tsp

For Marination:

Ginger paste - 1 tsp

Curd (yoghurt) - 100 gm

Coriander powder - 1/2 tsp

Lemon juice - 1 tbsp

Refined oil - 2 tsp

Garlic paste - 1 tsp

Red chilli powder - 2 pinches

Garam masala powder - 1/2 tsp

Well chopped green chilli - One

How to prepare Kathi Kebab Roll:

Step 1) Take boneless mutton slices into a vessel. Have all the marinade ingredients & rub properly. Allow the mutton to marinate whole night in the fridge so that the masalas are properly absorbed by the meat. Have one tsp of raw papaya into this meat. It would help the mutton in cooking faster.

Step 2) Then, heat the butter into a deep-bottom vessel. Once it is hot enough, have the mutton pieces into it. Sprinkle salt as needed and cook over the moderate flame. Keep the mutton closed so that it cooks into its own juices.

Step 3) When the mutton is half done and in case it turns out too dry, pours a little water & cook further. Check by breaking the mutton slices with a fork. If it breaks simply, it is done. Remove from the fire & place aside.

Step 4) Then, take a slight butter & cook the parathas on each side until they are crisp but not so brittle.

Step 5) Then, add the made filling, roll & wrap in a butter paper. Have it hot with the coriander chutney. You could also pack the delightful roll to the office or serve it as a dinner in the times you don’t want to cook an extensive meal.
