Kashmiri Pulao Recipe

This Ramadan treat yourself and your family with this scrumptious Kashmiri Pulao.

It's a rich rice dish that's elegantly made and super delicious.

Ingredients

  1. Rice 500gms (soaked for 20 minutes)
  2. 1 1/2 cup Chicken stock
  3. 1 pc badi elaichi
  4. 2 green cardamom
  5. 1/2 inch cinnamon stick
  6. 1/2 cup diced carrots
  7. 1/2 cup chopped beans
  8. 1/2 cup peas
  9. 1/2 cup sliced almonds
  10. 1/2cup chopped cashews
  11. 1/2 cup raisins
  12. 1/2 cup chopped pistachios
  13. 1 sliced onion
  14. 1 cup ghee
  15. 2 TSP oil
  16. 1 cup milk
  17. Few strands of saffron
  18. Salt to taste

Method

In a pan heat 1 tbsp of ghee, add whole spices and fry for a minute.

Add soaked rice and cook for 2 minutes.

Add all the chopped vegetables.

Add chicken stock and water.

Cook the rice until done.
