Feel the Royalty Of Lucknowi Flavors With Authentic Awadhi Chicken Biryani Recip

Speaking of royalty in food, we just cannot miss out on the delicious flavors of Lucknowi or Awadhi food. Not only the essence defines the royalty in itself, but every recipe is inspired by the authentic flavors that were served to the royal families in India.

Lucknow tradition is inspired by different recipe made with rice. They are rich in taste, aroma as well as the technique of cooking the recipes. One such mouth-watering recipe is the Awadhi chicken biryani recipe which is a sure top choice in the list. Ingredients of Lucknowi Authentic Chicken Biryani Recipe

For Biryani

  • Basmati Rice soaked for half an hour
  • Onion
  • Ghee
  • Cloves
  • Bay Leaf
  • Green Cardamom
  • Cinnamon stick
  • Shahi Jeera
  • Water
  • Green Chilies
  • Saffron soaked in milk
  • Mint leaves

To marinate

  • Medium sized chicken
  • Cinnamon
  • Cardamom
  • Cloves
  • Bay leaves
  • Salt
  • Cardamom powder
  • Curd
  • Ginger Garlic paste
  • Red Chili powder
  • For Cooking Rice
  • Shahi Jeera
  • Bay Leaf
  • Green Cardamom
  • Cinnamon stick
  • Oil/Ghee
  • Lemon Juice
  • Salt

To start with, you can marinate the chicken in the mentioned ingredients. Keep it aside for a while so that chicken can blend with all the ingredients. Now heat the oil in the frying pan on the medium flame. Add the sliced onion and let it caramelize.

Now take the deep bottomed wok and add ghee. Once the ghee is hot, add the cumin seeds and water. Remember, 2 cups of water for 1 cup of rice. Add salt and other whole spices when the water started boiling along with the rice. Once the rice is ¾ cooked, take the rice out and wash it to drain the excess water and starch.

Now was the wok properly and heat the ghee again. Add all the whole spices. Once you feel the fragrance, add the marinated chicken along with green chilies, mint and caramelized onions.

Now add the layer of rice on top of it along with soaked saffron on top it. Close the lid and simmer the biryani for 10 minutes. Serve it hot with vegetable or mint raita on the side.
