Ingredients for Grilled Chicken

  • Lime Juice (1Tbsp)
  • Ground Coriander  (1Tbsp)
  • Cayenne Pepper (1Tbsp)
  • Minced Fresh Garlic (1Tbsp)
  • Minced Fresh Ginger (1Tbsp)
  • Avocado  Oil (1Tbsp)
  • Soy Sauce (wheat-free) (1Tbsp)
  • Sugar-Free Fish Sauce (1Tbsp)
  • Honey for Sweetener (1Tbsp)
  • Pieces Of Chicken Thighs

Ingredients for Peanut Sauce

  • Sugar-Free Peanut Butter (1/2 cup)
  • Minced Fresh Ginger (1Tbsp)
  • Minced Fresh Garlic (1Tbsp)
  • Honey for Sweetener (2Tbsp)
  • Water (2Tbsp)
  • Lime Juice (1Tbsp)
  • Sugar-Free Rice Wine Vinegar  (2Tbsp)
  • Sugar-Free Fish Sauce  (1Tbsp)
  • Chopped Fresh Jalapeño Pepper (1Tbsp)

Put all the above ingredients in a blender until it gets smooth.

INSTRUCTIONS

Mix the lime juice, fish sauce, rice wine vinegar, soy sauce, avocado oil, ginger, garlic, cayenne pepper, ground coriander and sugar in an enormous bowl and whisk together.

Add chicken pieces in this mixture.  Once it’s mixed in the mixture, put it in the refrigerator for 24hrs & take it out from the refrigerator 1/2 hour before cooking & preheat the grill.

Once it’s out from refrigerator, grill the chicken over medium heat (per side 8-10min).

Service ready Chicken with prepared Peanut Sauce. You may also garnish this with cabbage, scallions and cilantro.
