Ice Cream Treats for the Holiday Season

It’s time to celebrate the festive season with friends and family. Ice creams are everyone’s favorite treat no matter what time of the year. Peppermint Flavored Brownie Ice Cream Cake

Light up your dessert table with this Holiday-inspired ice cream cake that’s a combination of decadent flavors and contrasting textures. The best part – you don’t need an ice cream maker to whip up the creamy ice cream filling for this dessert.

Ingredients

1 box brownie mix, plus additional ingredients on the box
8 oz softened cream cheese
½ cup sugar
1/8 cup milk
1 teaspoon peppermint extract
8 oz whipped cream
One bag of peppermint candy
1 cup chocolate syrup

Directions

Make the brownie batter as per package instructions.

Grease two baking pans, and divide the brownie batter evenly between the two baking pans. Bake in a preheated oven as per package instructions. When brownies are done, keep aside, and allow to cool.
To make the ice cream, combine the softened cream cheese and sugar, and whisk well until smooth and creamy.

Add milk and peppermint extract and whisk again.

Fold in the whipped cream or ready-to-use cool whip.

Break the peppermint candy into smaller bits, and add them to the ice cream mix. Gently fold all ingredients to combine everything well.

Assembling

Line the sides of a spring foam pan with parchment paper. It’s important that your spring foam pan is the same size as your brownie. Place the first layer of the brownie on the bottom of the pan.

Spread half the peppermint ice cream mix on top of the first brownie layer. Cover with the second layer of brownie. Drizzle warm chocolate syrup over the brownie layer, and top with the remaining peppermint ice cream.

Freeze the cake overnight.

Before serving, remove the cake from the spring foam pan and remove parchment paper from all sides.


Top with additional chocolate sauce and use whipped cream to create beautiful piping around the ice cream cake.

Top with crushed peppermint candy bits just before serving.
