India has a monopoly business when it comes to spices. One of the most important spices of India is chilli or dried chilli which can be used as a spice. The states like Tamil Nadu, Karnataka and Punjab are some of the most prominent Red Chilli Producers of India. 2. Sowing Time- there is a time for sowing, growing and harvesting for every crop. This is determined according to the climatic patterns as well as the adaptability of the crops in different season. The crop calendar is followed for every plant. The sowing time for chilli is sown in a nursery in October or November and they are gradually transplanted to the field in February. Punjab Sindhuri- this was popularized in the year 2013. The plants can be identified by their dark green colour. The colour is mainly dark green before maturing and soon turns to red. This variant matures very soon and is hence called the early manufacturing variant. 2. Punjab Tej- Also popularized in the year 2013 this particular variant unlike Sindhuri is light green in colour. These are also early maturing however they are light skinned and long and turns to a deep red colour when mature. 3. Punjab Surkh- This is a comparatively old variant and dates back to the late ’90s. Plants are medium to tall and have very dark green leaves. This variant is mainly used in salads and is also used to make spices by drying the chilly.
