Idli Sambar- A Sumptuous Breakfast!

Though various variants of Sambhar present a case for themselves, South Indian Idli Sambhar tops the list. The preparation process is simple and quick-cooking veggies like carrots beans and shallows. It is not going to take a lot of time in preparation and you can prepare it early morning.

Idli Sambar- Tips for preparation

1. The aroma or taste of sambhar evolves on the quality of powder used. Opt for a home-made powder with a good aroma. Even some Sambhar powders bought from the shops are real good and give good aroma and taste.
2. For making idli sambhar do not use veggies like bhindi or brinjal as a different flavour is provided and they do not go with idli for breakfast
3. To thicken the sambhar and providing sweet taste some hotels use pumpkin. If there is a golden pumpkin you can add a few cubes in combination with dal. Along with dal they have to be mashed well.
4. Just spend abound 35 minutes, to cook dal including sambhar powder and the sambhar. If you are planning to add veggies like drumstick it would be all the more tastier!

Recipe for Idli Sambar

1. Cook dal in a pressure cooker for a couple of minutes until it becomes soft. To the dal, you can add a red pumpkin. This contributes to a unique sweet flavour that is found in South Indian hotels
2. Dry chana dal, roast chillies urad dal on a medium flame till it becomes red
3. Coriander seeds have to be roasted till crackling. To it add methi and try till it turns dark. You can add cumin and if you are planning to add coconut salute for a minute. You can even add tamarind seed

Firstly oil has to be heated in a pot. Then add methi, mustard and cumin. When it begins to clutter, you can add red chillies and curry leaves. Till the red chillies turn crisp you have to salute it. Then you need to add carrot, shallots and beans. Then salute for 2 to 3 minutes and add mashed or chopped turmeric, salt and ripe tomatoes. Till the tomatoes turn mushy you have to salute as they cook fast if they are chopped.

Then add the sambhar powder that brings out the essence of the sambhar flavour. You can add coriander leaves and when sambhar begins to bubble switch it off.
